Raw Vegan Tabbouleh Salad

Ingredients

  • 1 cucumber
  • 1/2 cup cauliflower rice
  • 1/4 cup tomato
  • 2 tablespoons red onion
  • 1 cup parsley
  • 1/2 avocado
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt

Preparation

  1. Dice the cucumber.

  2. Mince the tomato.

  3. Mince the red onion.

  4. Chop the parsley if not already chopped.

  5. In a large bowl, combine all the prepared vegetables and herbs.

  6. Add the avocado, lemon juice, olive oil, and sea salt to the bowl.

  7. Mix all ingredients together until well combined.

  8. Serve immediately or refrigerate for later.
