Easy Vegan Chickpea Salad with Lemon Dressing
Ingredients
- 3 cups cooked chickpeas (or rinsed and drained)
- 1 medium red bell pepper, chopped
- 1 1/2 cups chopped parsley
- 1/2 cup chopped red onion
- 1/2 cup chopped celery plus leaves
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Preparation
In a large bowl, add the chickpeas, bell pepper, onion, celery, and parsley.
In a small bowl, whisk together olive oil, lemon juice, and minced garlic, then season with salt and black pepper.
Pour the dressing over the salad mixture, toss to coat, and serve immediately.
