Red Cabbage Beetroot Salad
Ingredients
- Red cabbage
- Red onion, thinly sliced
- Beetroot, boiled and sliced
- Parsley, finely chopped
- Fresh mushrooms, sliced
- Cherry tomatoes
- 1/4 avocado
Dressing
- 1 tablespoon olive oil
- Juice of 1 lemon
- Black pepper
- Sea salt
- Oregano
- Tarragon
- 1 teaspoon natural apple vinegar
Preparation
Boil and slice the beetroot if not already prepared
Chop or slice the other vegetables and herbs as specified
Mix all dressing ingredients together in a small bowl
Combine all salad ingredients in a large bowl
Pour the dressing over the salad and toss to coat evenly
