Fresh and Simple Summer Chickpea Salad

Ingredients

  • 1 can chickpeas, rinsed
  • 1 cucumber, seeded, halved and sliced in rounds
  • 1/2 red onion
  • 1 tbsp chopped basil and parsley
  • 2 tbsp olive oil
  • 4 tbsp red wine vinegar
  • 1 tsp salt
  • Juice from 1/2 lemon

Preparation

  1. Combine all ingredients and let them sit for 20 minutes before enjoying.
