Fresh and Simple Summer Chickpea Salad
Ingredients
- 1 can chickpeas, rinsed
- 1 cucumber, seeded, halved and sliced in rounds
- 1/2 red onion
- 1 tbsp chopped basil and parsley
- 2 tbsp olive oil
- 4 tbsp red wine vinegar
- 1 tsp salt
- Juice from 1/2 lemon
Preparation
Combine all ingredients and let them sit for 20 minutes before enjoying.
