Five Minute Three Bean Salad

Ingredients

  • 1/2 Red Onion
  • 3/4 Cup Cucumber
  • 1/2 Cup Parsley
  • 15 Oz Chickpeas (Canned)
  • 15 Oz Kidney Beans (Canned)
  • 15 Oz Cannellini Beans (Canned)

Dressing

  • 2 Tbsp Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 1/2 Tsp Dried Oregano
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper

Preparation

  1. Thinly slice the onion and chop the cucumber into small cubes.

  2. In a large mixing bowl, add the onion, cucumber, parsley, chickpeas, kidney beans, and cannellini beans.

  3. Mix thoroughly to ensure an even distribution of ingredients.

  4. In a measuring jug, combine the oil, red wine vinegar, oregano, salt and pepper, and whisk until the liquids are combined.

  5. Add the dressing to the bean mixture and stir to coat.
