Quinoa and Chickpea Greek Style Salad
Ingredients
- 1 cup cooked quinoa
- 1 can chickpea, rinsed and drained
- 1 cucumber, chopped
- 1 yellow pepper, chopped
- 1 cup tomato, chopped
- 1/4 cup red onion, chopped
- 1/4 pumpkin seeds
- 1 lemon, juiced
- 3 tbsp olive oil
- 2 tbsp balsamic or red wine vinager
- 1 tsp dried basil
- a big pinch of salt & pepper
Preparation
Mix all salad ingredients together in a large bowl
Whisk together dressing ingredients and season to taste
Pour dressing on salad and toss together
