Dairy-Free Tzatziki with Tofu and Fresh Herbs

Ingredients

  • 1 block medium or firm tofu
  • 1 small lemon, juiced
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1/4 cup fresh dill, loosely chopped
  • 2 tbsp fresh parsley, loosely chopped
  • 1/2 tbsp fresh mint, loosely chopped
  • A pinch of salt & pepper
  • 1 cup cucumber, shredded

Preparation

  1. Add tofu, lemon juice, olive oil and garlic to a food processor and blend until smooth.

  2. Add fresh herbs, salt and pepper and blend until well incorporated.

  3. Shred cucumber, add to food processor and pulse to combine.
