Easy Vegan Tzatziki Dip with Fresh Herbs

Ingredients

  • 1 block medium or firm tofu
  • Juice of 1 small lemon
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1/4 cup fresh dill, loosely chopped
  • 2 tbsp fresh parsley, loosely chopped
  • 1/2 tbsp fresh mint, loosely chopped
  • A pinch of salt and pepper
  • 1 cup cucumber, shredded

Preparation

  1. Add tofu, lemon juice, olive oil, and garlic to a food processor and blend until smooth.

  2. Add fresh herbs, salt, and pepper and blend until well incorporated.

  3. Shred cucumber and add to food processor, then pulse to combine.

Tips

  1. Use fresh herbs to give this the true flavor.
