Vegan Tzatziki Dip with Fresh Herbs
Ingredients
- 1 unpeeled cucumber, finely grated
- 1 cup plant yogurt
- 1 cup cashews (soaked 2-3 hours)
- 3 minced garlic cloves
- 1/4 cup finely chopped fresh dill
- 1 tsp lime zest
- 2 tbsp lemon juice
- salt to taste
- few turns black pepper
Preparation
Transfer grated cucumber to paper towels and squeeze out excess moisture.
Blend all ingredients until smooth.
Spread on some toast and top with melon-balled cucumber spheres, more fresh dill and your choice of hemp seeds, fresh dill, furikake etc.
