Vegan Tzatziki Dip with Fresh Herbs

Ingredients

  • 1 unpeeled cucumber, finely grated
  • 1 cup plant yogurt
  • 1 cup cashews (soaked 2-3 hours)
  • 3 minced garlic cloves
  • 1/4 cup finely chopped fresh dill
  • 1 tsp lime zest
  • 2 tbsp lemon juice
  • salt to taste
  • few turns black pepper

Preparation

  1. Transfer grated cucumber to paper towels and squeeze out excess moisture.

  2. Blend all ingredients until smooth.

  3. Spread on some toast and top with melon-balled cucumber spheres, more fresh dill and your choice of hemp seeds, fresh dill, furikake etc.
