Vegan Nacho Cheese Sauce

Ingredients

  • 1 medium carrot
  • 1/2 cup cashews, soaked
  • 1 jalapeño in vinegar
  • 2 tbsp jalapeño vinegar
  • 1/4 cup nutritional yeast
  • 1 tbsp lemon juice
  • 3/4 cup water
  • 1/2 small potato
  • 1 tbsp garlic, minced
  • Salt and pepper to taste

Preparation

  1. Soak cashews in hot water for about 20 minutes.

  2. Boil carrot and potato until soft.

  3. Drain cooked carrot and potato.

  4. Add all ingredients to blender and blend until smooth.

  5. Serve warm.
