Artichoke Pesto with Avocado and Parsley
Ingredients
- 1 jar [ca.280g] marinated artichokes, washed and drained (drained: ca. 150g)
- 1 handful fresh parsley, roughly chopped
- 1 handful fresh basil leaves
- Juice of 1/2 lemon
- 2 cloves of garlic, roughly chopped
- 1/4 cup water
- 1/4 cup olive oil
- 1/4 avocado, roughly chopped
- Salt and pepper to taste
Preparation
Add all the ingredients to a high speed blender or a food processor and blend until smooth.
Add salt and pepper to taste.
