Artichoke Pesto with Avocado and Parsley

Ingredients

  • 1 jar [ca.280g] marinated artichokes, washed and drained (drained: ca. 150g)
  • 1 handful fresh parsley, roughly chopped
  • 1 handful fresh basil leaves
  • Juice of 1/2 lemon
  • 2 cloves of garlic, roughly chopped
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1/4 avocado, roughly chopped
  • Salt and pepper to taste

Preparation

  1. Add all the ingredients to a high speed blender or a food processor and blend until smooth.

  2. Add salt and pepper to taste.
