Greek-Inspired Hummus with Balsamic Onions Dip

Ingredients

  • 1 red onion
  • 1 tbsp balsamic vinegar
  • 2 tbsp tahini
  • 1 clove of garlic
  • 1 lemon, juiced
  • 1 can of chickpeas
  • 1/4 cup water
  • 1/4 cup of olive oil
  • Salt & pepper

Preparation

  1. Slice the onion and slowly caramelize it in a pan with the balsamic vinegar for about 15 minutes.

  2. In a food processor, blitz the tahini, garlic, water, and lemon juice until a smooth liquidy paste is formed.

  3. Add the chickpeas and the onions, blitz until smooth, adding olive oil slowly and more water if necessary until desired consistency is reached.

  4. Season with salt and pepper and serve with whatever you wish.
