Creamy Tahini Hummus
Ingredients
- 1 can of chickpeas (or 250g pre-cooked chickpeas)
- 2 tablespoons tahini
- Juice from 1 lemon
- 1/4 cup olive oil
- 1/4 cup ice-cold water (or more as needed)
- 1 garlic clove
- Salt to taste
Preparation
Add chickpeas, tahini, lemon juice, olive oil, garlic clove, and a pinch of salt to a food processor.
Blend the ingredients until they start to combine, stopping to scrape down the sides if necessary.
Gradually add ice-cold water, a tablespoon at a time, while continuing to blend. Adjust the amount of water to achieve your desired consistency.
Blend for about 2 minutes until the mixture is smooth and creamy. You can blend longer for an even creamier texture.
Taste and adjust the seasoning, adding more salt if needed.
Serve the hummus with your favorite accompaniments, such as tortilla chips or fresh coriander.
