Pea, Spinach, and Mint Hummus
Ingredients
- 1 can chickpeas
- 2 tbsp tahini
- 2 garlic cloves
- A big bunch of fresh mint
- 70g frozen peas
- 1 big handful of spinach
- 2 sprigs of spring onion
- 1 lemon, juiced
- 1/3 cup olive oil
- 2 tbsp white wine vinegar
- Water
- Salt & pepper
Preparation
Blitz the tahini, garlic and lemon in a food processor, adding little bits of water until you get a smooth paste.
Add the chickpeas and blitz adding oil gradually.
Add peas, spinach, mint, white wine vinegar and salt and pepper. Add more water to reach the desired consistency.
