Easy Dairy-Free Tzatziki with Tofu Base

Ingredients

  • 1 block medium or firm tofu
  • 1 small lemon, juiced
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1/4 cup fresh dill, loosely chopped
  • 2 tbsp fresh parsley, loosely chopped
  • 1/2 tbsp fresh mint, loosely chopped
  • A pinch of salt and pepper
  • 1 cup cucumber, shredded

Preparation

  1. Add tofu, lemon juice, olive oil, and garlic to a food processor and blend until smooth.

  2. Add fresh herbs, salt, and pepper, and blend until well incorporated.

  3. Shred the cucumber, add it to the food processor, and pulse to combine.
