Giant Cous Cous Tabbouleh Salad

Ingredients

  • 1/2 a cucumber
  • 10-12 radishes
  • handful of chopped fresh mint
  • handful of chopped fresh parsley
  • 1 lemon
  • 2 tbsp olive oil
  • salt & pepper
  • 150 g giant cous cous
  • 1 veggie stock cube

Preparation

  1. Start by preparing the cous cous using the stock cube (according to packet)

  2. Whilst the cous cous is preparing start chopping your vegetables into small cubes and chop up the herbs

  3. Once the cous cous is ready leave to stand for 5 minutes and fluff up with a fork

  4. Mix all other ingredients including dressing and seasoning, in with the cous cous and youre doooone !
