Lentil Mint Salad
Ingredients
- 1 cup cooked lentils
- 3 medium zucchini
- 1 cup steamed broccoli
- 1 large avocado
- 2 small handful of fresh mint, chopped
- 2 - 3 tbsp olive oil
- juice of 2 limes
- salt and pepper to taste
- large handful cashews, chopped
Preparation
Peel the zucchini into thin strips
Place all the ingredients in a bowl except for the cashews. Mix well
Toast the cashews in a saucepan for a couple minutes until they are golden brown
Divide the salad into 2 or 3 bowls and sprinkle the cashews on top. Enjoy
