Lentil Mint Salad

Ingredients

  • 1 cup cooked lentils
  • 3 medium zucchini
  • 1 cup steamed broccoli
  • 1 large avocado
  • 2 small handful of fresh mint, chopped
  • 2 - 3 tbsp olive oil
  • juice of 2 limes
  • salt and pepper to taste
  • large handful cashews, chopped

Preparation

  1. Peel the zucchini into thin strips

  2. Place all the ingredients in a bowl except for the cashews. Mix well

  3. Toast the cashews in a saucepan for a couple minutes until they are golden brown

  4. Divide the salad into 2 or 3 bowls and sprinkle the cashews on top. Enjoy
