Chickpea Pasta with Avocado Pesto

Ingredients

  • cavatappi chickpea pasta
  • red onions
  • mushrooms
  • tomatoes
  • spinach

Avocado pesto

  • 1 cup fresh basil
  • 1/2 ripe avocado
  • 3 tbsp pine nuts
  • 3 tbsp water
  • 2-3 cloves garlic
  • 1.5 tbsp olive oil
  • juice from 1 lemon
  • 1/2 tsp salt

Preparation

  1. Blend the pesto ingredients together until smooth.

  2. Sauté the red onions, mushrooms, tomatoes, and spinach in a skillet until tender.

  3. Cook the cavatappi chickpea pasta according to package directions.

  4. Toss the cooked pasta with the sautéed vegetables and pesto to combine.
