Chickpea Pasta with Avocado Pesto
Ingredients
- cavatappi chickpea pasta
- red onions
- mushrooms
- tomatoes
- spinach
Avocado pesto
- 1 cup fresh basil
- 1/2 ripe avocado
- 3 tbsp pine nuts
- 3 tbsp water
- 2-3 cloves garlic
- 1.5 tbsp olive oil
- juice from 1 lemon
- 1/2 tsp salt
Preparation
Blend the pesto ingredients together until smooth.
Sauté the red onions, mushrooms, tomatoes, and spinach in a skillet until tender.
Cook the cavatappi chickpea pasta according to package directions.
Toss the cooked pasta with the sautéed vegetables and pesto to combine.
