Herb and Garlic Cashew Cream Cheese

Ingredients

  • 1 cup cashew, soaked or boiled to soften
  • 1/2 cup water
  • 1/2 lemon, juiced
  • 1/2 tbsp olive oil
  • 1/2 tbsp nutritional yeast (optional)
  • 1 garlic clove
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh basil, finely chopped
  • 1 tbsp chives, thinly sliced
  • A pinch of salt & pepper

Preparation

  1. Add all ingredients, except for fresh herbs, and blend until smooth and creamy, scraping sides as you go

  2. Add a pinch of the herbs and blend to infuse flavors

  3. Add remaining herbs and mix with a spoon

  4. Transfer to a bowl and refrigerate for about an hour to let firm up
