Quick and Easy Green Pesto Pasta

Ingredients

  • 160-200g pasta
  • 1 cup broccoli florets
  • 2/3 cup packed fresh basil
  • 1 clove of garlic
  • 1/3 cup fresh frozen garden peas
  • 1 tbs nutritional yeast
  • juice of half a lemon
  • 2 tbs of water

Preparation

  1. Boil pasta and steam broccoli over it until slightly soft, then rinse broccoli in cold water.

  2. Place basil, garlic, peas, nutritional yeast, and lemon juice into a blender and blend, adding water one tablespoon at a time to achieve the desired consistency.

  3. Drain the cooked pasta, add the blended pesto, mix well, return to heat, and warm through for a few minutes.

  4. Serve and enjoy.
