Quick and Easy Green Pesto Pasta
Ingredients
- 160-200g pasta
- 1 cup broccoli florets
- 2/3 cup packed fresh basil
- 1 clove of garlic
- 1/3 cup fresh frozen garden peas
- 1 tbs nutritional yeast
- juice of half a lemon
- 2 tbs of water
Preparation
Boil pasta and steam broccoli over it until slightly soft, then rinse broccoli in cold water.
Place basil, garlic, peas, nutritional yeast, and lemon juice into a blender and blend, adding water one tablespoon at a time to achieve the desired consistency.
Drain the cooked pasta, add the blended pesto, mix well, return to heat, and warm through for a few minutes.
Serve and enjoy.
