Green Goodness Pesto Pasta

Ingredients

  • 160-200 grams pasta
  • 1 cup broccoli florets
  • 2/3 cup packed fresh basil
  • 1 clove garlic
  • 1/3 cup fresh frozen garden peas
  • 1 tablespoon nutritional yeast
  • juice of half a lemon
  • 2 tablespoons water

Preparation

  1. Get the pasta on to boil and steam the broccoli over the boiling pasta until slightly soft, then rinse the broccoli in cold water.

  2. Place all the pesto ingredients into a blender and blend, adding the water one tablespoon at a time to get it going.

  3. When the pasta is cooked, drain and rinse it, add the pesto, mix well, return to heat, and warm through for a few minutes.

  4. Serve and enjoy.
