Vegan Pesto Pea Pasta
Ingredients
- 16 oz Banza pasta
- 1 cup peas
Pesto pea sauce
- 2 cups fresh basil
- 1 tbsp minced garlic
- 1/4 cup walnuts
- 1 small lemon, juice
- 1/8 cup pepita seeds
- 3/4 cup peas
- 1/4 cup nutritional yeast
- 1 tbsp olive oil
- 1/4 cup plain coconut yogurt
- 1/2 cup water
- Salt and pepper to taste
Preparation
Fill pot about halfway with water and put on high heat until it begins to boil. Add pasta and turn down to a simmer. Cook for about 9-12 minutes depending on instructions on box.
While pasta is cooking add all the other ingredients to a blender and blend until smooth.
Drain pasta. Slowly add pesto sauce to pasta and mix it in. Stop when desired sauciness is achieved. I typically don’t use all of the pesto sauce for one box of pasta. I like to add about 1 cup whole peas after for more protein and texture.
