Vegan Pesto Pea Pasta

Ingredients

  • 16 oz Banza pasta
  • 1 cup peas

Pesto pea sauce

  • 2 cups fresh basil
  • 1 tbsp minced garlic
  • 1/4 cup walnuts
  • 1 small lemon, juice
  • 1/8 cup pepita seeds
  • 3/4 cup peas
  • 1/4 cup nutritional yeast
  • 1 tbsp olive oil
  • 1/4 cup plain coconut yogurt
  • 1/2 cup water
  • Salt and pepper to taste

Preparation

  1. Fill pot about halfway with water and put on high heat until it begins to boil. Add pasta and turn down to a simmer. Cook for about 9-12 minutes depending on instructions on box.

  2. While pasta is cooking add all the other ingredients to a blender and blend until smooth.

  3. Drain pasta. Slowly add pesto sauce to pasta and mix it in. Stop when desired sauciness is achieved. I typically don’t use all of the pesto sauce for one box of pasta. I like to add about 1 cup whole peas after for more protein and texture.
