Cucumber Avocado Summer Salad

Ingredients

Salad

  • 2 cucumbers
  • 1 avocado
  • 1/4 cup red onion
  • 1/2 cup cooked quinoa
  • 2 tbsp raw pumpkin seeds

Dressing

  • 1 lime
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 tbsp fresh basil
  • 1 tbsp fresh mint
  • A pinch of salt and pepper

Preparation

  1. Blend all of the dressing ingredients together in a blender on high until smooth.

  2. Combine the salad ingredients in a bowl

  3. Pour the dressing over the salad and serve immediately.
