Quinoa and Chickpea Greek Style Salad

Ingredients

Salad

  • 1 cup cooked quinoa
  • 1 can chickpeas, rinsed and drained
  • 1 cucumber, chopped
  • 1 yellow pepper, chopped
  • 1 cup tomato, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup pumpkin seeds

Dressing

  • 1 lemon, juiced
  • 3 tbsp olive oil
  • 2 tbsp balsamic or red wine vinegar
  • 1 tsp dried basil
  • A big pinch of salt and pepper

Preparation

  1. Mix all salad ingredients together in a large bowl.

  2. Whisk together dressing ingredients and season to taste.

  3. Pour dressing on salad and toss together.
