Bulgur Salad with Fresh Vegetables

Ingredients

  • Parsley
  • 1 Nectarine
  • 1/2-1 Zucchini (grated)
  • 1 Tomato
  • 1 can of Chickpeas
  • 1/2 cup of Bulgur

Dressing

  • 1/2 lemon
  • 1-2 tsp olive oil
  • 1/8-1/4 tsp paprika
  • 1/8 tsp Italian seasoning
  • 1/8-1/4 tsp of salt

Preparation

  1. Prepare the bulgur by soaking it in hot water until tender.

  2. Grate the zucchini and chop the tomato and parsley.

  3. Mix the dressing ingredients together.

  4. Combine all ingredients in a bowl.
