Kale Salad with Peanut Sauce

Ingredients

  • kale
  • roasted sweet potatoes
  • cooked quinoa
  • tofu or sub for chickpeas
  • coriander
  • sunflower seeds
  • roasted broccoli

Peanut sauce

  • 1/2 cup peanut butter
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1 lemon juiced

Preparation

  1. Roast sweet potatoes and broccoli in the oven until tender

  2. Cook quinoa according to package instructions and let it cool

  3. Blend or whisk together the peanut sauce ingredients until smooth. Add water to adjust consistency if needed.

  4. Combine all salad ingredients in a bowl, add peanut sauce, and toss to coat
