Mediterranean Kale Salad with Tofu

Ingredients

  • Kale
  • Cherry tomatoes
  • Dill
  • Kalamata olives
  • Avocado
  • Tofu
  • Red bell pepper
  • Olive oil

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • Dash of pepper
  • Dash of garlic powder
  • 1/4 teaspoon dried oregano

Preparation

  1. Massage the kale with a bit of olive oil.

  2. Grill the tofu until crispy.

  3. Mash the avocado.

  4. Chop the cherry tomatoes, dill, kalamata olives, and red bell pepper.

  5. Prepare the dressing by mixing 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 1/4 teaspoon salt, a dash of pepper, a dash of garlic powder, and 1/4 teaspoon dried oregano.

  6. Combine all ingredients in a bowl and toss with the dressing.
