Mediterranean Kale Salad with Tofu
Ingredients
- Kale
- Cherry tomatoes
- Dill
- Kalamata olives
- Avocado
- Tofu
- Red bell pepper
- Olive oil
Dressing
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- Dash of pepper
- Dash of garlic powder
- 1/4 teaspoon dried oregano
Preparation
Massage the kale with a bit of olive oil.
Grill the tofu until crispy.
Mash the avocado.
Chop the cherry tomatoes, dill, kalamata olives, and red bell pepper.
Prepare the dressing by mixing 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 1/4 teaspoon salt, a dash of pepper, a dash of garlic powder, and 1/4 teaspoon dried oregano.
Combine all ingredients in a bowl and toss with the dressing.
