Massaged Kale and Spinach Salad with Vegetables
Ingredients
- Kale
- Spinach
- 2 tbsp tahini
- Juice of 1/2 lemon
- 2 tbsp almond milk
- 1 tsp garlic granules
- 1 tbsp nutritional yeast
- Salt
- Pepper
- Roasted new potatoes
- Olive oil
- Rosemary
- Roasted sweet potatoes
- Coconut oil
- Paprika
- Cumin
- Black pepper
- Cucumber
- Tomatoes
- Fresh parsley
- Fresh coriander
- Olives
- 1/2 can black beans
- Omega mix seeds
Preparation
Massage kale and spinach with 2 tbsp tahini, juice of 1/2 lemon, 2 tbsp almond milk, 1 tsp garlic granules, 1 tbsp nutritional yeast, salt, and pepper.
Use left over roasted new potatoes that were cooked in olive oil and rosemary.
Use left over sweet potatoes cooked in coconut oil, paprika, cumin, and black pepper.
Add cucumber, tomatoes, fresh parsley, fresh coriander, olives, and 1/2 can black beans.
Top with the remaining tahini dressing and sprinkle omega mix seeds for a fresh and satisfying dish.
