Cauliflower Gnocchi with Super Green Pesto and Mushrooms

Ingredients

  • 1 cup boiled and mashed cauliflower
  • 1 1/2 cups cassava flour
  • handful of cilantro
  • handful of arugula
  • spinach
  • 3 tablespoons olive oil
  • 1/2 lemon
  • 1 tablespoon tahini
  • 1 garlic clove
  • seasoning

Preparation

  1. Mix 1 cup of boiled and mashed cauliflower with 1 1/2 cups cassava flour to form a dough.

  2. Shape the dough into gnocchi.

  3. Boil the gnocchi.

  4. Finish the gnocchi on a skillet to make it crispy.

  5. For the pesto, blend a handful of cilantro with a handful of arugula, spinach, 3 tablespoons olive oil, 1/2 lemon, 1 tablespoon tahini, 1 garlic clove, and seasoning.
