Cauliflower Gnocchi with Super Green Pesto and Mushrooms
Ingredients
- 1 cup boiled and mashed cauliflower
- 1 1/2 cups cassava flour
- handful of cilantro
- handful of arugula
- spinach
- 3 tablespoons olive oil
- 1/2 lemon
- 1 tablespoon tahini
- 1 garlic clove
- seasoning
Preparation
Mix 1 cup of boiled and mashed cauliflower with 1 1/2 cups cassava flour to form a dough.
Shape the dough into gnocchi.
Boil the gnocchi.
Finish the gnocchi on a skillet to make it crispy.
For the pesto, blend a handful of cilantro with a handful of arugula, spinach, 3 tablespoons olive oil, 1/2 lemon, 1 tablespoon tahini, 1 garlic clove, and seasoning.
