Homemade Cauliflower Gnocchi with Pesto
Ingredients
- 1 cup boiled and mashed cauliflower
- 1.5 cups cassava flour
- Handful of cilantro
- Handful of arugula
- Spinach
- 3 tablespoons olive oil
- 1/2 lemon
- 1 tablespoon tahini
- 1 garlic clove
- Seasoning
Preparation
Boil and mash the cauliflower.
Mix 1 cup of mashed cauliflower with 1.5 cups cassava flour to form a dough.
Shape the dough into gnocchi pieces.
Boil the gnocchi until they float to the surface.
Finish the gnocchi on a skillet to make them crispy.
For the pesto, blend a handful of cilantro, a handful of arugula, spinach, 3 tablespoons olive oil, half a lemon, 1 tablespoon tahini, 1 garlic clove, and seasoning in a blender.
