Homemade Cauliflower Gnocchi with Pesto

Ingredients

  • 1 cup boiled and mashed cauliflower
  • 1.5 cups cassava flour
  • Handful of cilantro
  • Handful of arugula
  • Spinach
  • 3 tablespoons olive oil
  • 1/2 lemon
  • 1 tablespoon tahini
  • 1 garlic clove
  • Seasoning

Preparation

  1. Boil and mash the cauliflower.

  2. Mix 1 cup of mashed cauliflower with 1.5 cups cassava flour to form a dough.

  3. Shape the dough into gnocchi pieces.

  4. Boil the gnocchi until they float to the surface.

  5. Finish the gnocchi on a skillet to make them crispy.

  6. For the pesto, blend a handful of cilantro, a handful of arugula, spinach, 3 tablespoons olive oil, half a lemon, 1 tablespoon tahini, 1 garlic clove, and seasoning in a blender.
