Homemade Cauliflower and Zucchini Gnocchi
Ingredients
- 1 cup boiled and mashed cauliflower
- 1 1/2 cups cassava flour
- 1/2 zucchini, grated
Preparation
While the boiled and mashed cauliflower is still hot, mix it with the zucchini and cassava flour.
Knead the mixture with hands until a dough forms. If it is too wet, add more flour.
Form the dough into gnocchi squares.
Drop the gnocchi into boiling water until they float.
Drain the water.
Heat the gnocchi in a skillet with a bit of oil or ghee and toss for a few minutes to crisp the edges.
