Easy Vegan Cauliflower Gnocchi Recipe
Ingredients
- 1 head cauliflower
- 1/3 cup cassava flour
- 1/4 cup tapioca starch
- 1/4 - 1/2 tsp garlic granules
- 1/2 tsp salt
Preparation
Chop the cauliflower into florets and simmer until just soft ~6mins
Place in a food processor and pulse just until it forms a rice consistency
Transfer between two tea towels and absorb out as much water as possible
Pour into a bowl and mix in the remaining ingredients
Once forms a dough, roll into small balls and slightly flatten, place on a baking sheet
Freeze for 15 mins
If eating straight away, cook (i recommend air frying for ~15 mins or sautéing for ~10 mins)
With the remaining, once frozen place in a tupperware tub or reusable freezer bag and cook from frozen next time
Served mine with sautéed kale, paprika bbq baked chickpeas, soy sauce roasted oyster mushrooms, sweetcorn, smoked hummus, guacamole
