Easy Vegan Cauliflower Gnocchi Recipe

Ingredients

  • 1 head cauliflower
  • 1/3 cup cassava flour
  • 1/4 cup tapioca starch
  • 1/4 - 1/2 tsp garlic granules
  • 1/2 tsp salt

Preparation

  1. Chop the cauliflower into florets and simmer until just soft ~6mins

  2. Place in a food processor and pulse just until it forms a rice consistency

  3. Transfer between two tea towels and absorb out as much water as possible

  4. Pour into a bowl and mix in the remaining ingredients

  5. Once forms a dough, roll into small balls and slightly flatten, place on a baking sheet

  6. Freeze for 15 mins

  7. If eating straight away, cook (i recommend air frying for ~15 mins or sautéing for ~10 mins)

  8. With the remaining, once frozen place in a tupperware tub or reusable freezer bag and cook from frozen next time

  9. Served mine with sautéed kale, paprika bbq baked chickpeas, soy sauce roasted oyster mushrooms, sweetcorn, smoked hummus, guacamole
