Red Capsicum and Chickpea Stew

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 3 capsicums, roughly chopped
  • 1 white potato, peeled and cubed
  • 1 cup chickpeas
  • 1/2 cup tomato passata
  • 1/2 cup water
  • handful fresh basil leaves
  • 1 teaspoon rosemary
  • 1 teaspoon oregano
  • salt and pepper, to taste

Preparation

  1. Put the oil into the metal bowl with onions, garlic and peppers

  2. Run the SIMMER program for 5 minutes/ speed 1A/110 °C

  3. Add the rest of the vegetables, tomato passata, spices and season to taste

  4. Restart the program for 40 minutes

  5. Remove the cup to allow water to evaporate while cooking

  6. Serve warm and enjoy
