This Creeeeamy Mushroom Soup

Ingredients

  • 800g mixed mushroooms (chestnut, button, portobello)
  • 1 white onion
  • 3 cloves of garlic
  • 1 tbsp chopped fresh parsley
  • olive oil
  • salt & pepper
  • 1 stock cube
  • water

Preparation

  1. Chop up all the mushrooms roughly

  2. Chop the onion & garlic roughly & sauté until slightly

  3. Add in mushrooms & cook until the water had come out of them, about 10 mins

  4. Stir for another minute & then just cover with water & add stock cube

  5. Bring to a boil & then simmer for about 20 minds until everything is soft

  6. Blend until silky smooth & serve with whatever you want !! if you want to add more water to reach your desired consistency then do ! serve with fresh parsley & a good grinding of salt !
