This Creeeeamy Mushroom Soup
Ingredients
- 800g mixed mushroooms (chestnut, button, portobello)
- 1 white onion
- 3 cloves of garlic
- 1 tbsp chopped fresh parsley
- olive oil
- salt & pepper
- 1 stock cube
- water
Preparation
Chop up all the mushrooms roughly
Chop the onion & garlic roughly & sauté until slightly
Add in mushrooms & cook until the water had come out of them, about 10 mins
Stir for another minute & then just cover with water & add stock cube
Bring to a boil & then simmer for about 20 minds until everything is soft
Blend until silky smooth & serve with whatever you want !! if you want to add more water to reach your desired consistency then do ! serve with fresh parsley & a good grinding of salt !
