Creamy Cauliflower Soup with Spices

Ingredients

  • 1 cauliflower
  • 1 white onion
  • 3 cloves of garlic
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • Olive oil
  • Salt & pepper
  • 1 stock cube
  • Water

Preparation

  1. Chop the onion and garlic roughly.

  2. Sauté the onion for about 5 minutes until slightly brown and then add the garlic for another minute.

  3. Add the spices and the cauliflower.

  4. Stir for another minute and then just cover with water and add a stock cube.

  5. Bring to a boil and then simmer for about 20 minutes until everything is soft.

  6. Blend until silky smooth.
