Creamy Cauliflower Miso Mushroom Sauce

Ingredients

  • 2 garlic cloves, minced
  • 1/2 cup cooked cauliflower
  • 1 cup miso soup (or 1 tbsp miso paste + 1 cup warm water)
  • 1/2 cup soaked cashews
  • 1 teaspoon (whole grain) mustard
  • 1/2 teaspoon onion powder
  • salt and pepper, herbamare mixed spices ?
  • 2 cups sliced mushrooms ?
  • 1/2 cup frozen peas
  • 2 tablespoons tapioca starch (optional: tamari, vegan mayo, tahini, chilli, garlic powder)

Preparation

  1. Steam cauliflower

  2. Blend all ingredients except for the garlic, mushrooms, peas and starch

  3. Heat up a large frying pan with some water (or oil) and add the garlic. Cook until lightly brown. Add mushrooms and cook until softened

  4. Add the blended sauce to the pan and mix until the mushrooms are well distributed. Add the starch and mix again until the sauce thickens

  5. Stir regularly until it starts to simmer, then add the peas. Continue cooking for about 10 minutes. (Taste and add extra spices if desired.)

  6. Use as a pasta sauce and add avocado, sprouts, peas, sesame seeds and radish
