Crispy Golden Brown Roasted Cauliflower

Ingredients

  • 1 head cauliflower
  • Extra virgin olive oil (to taste)
  • Salt (to taste)
  • Pepper (to taste)
  • 2 teaspoons maple syrup

Preparation

  1. Clean and dry a head of cauliflower. Trim off the stem and leaves. Cut into fourths and then release the florets from the rest of the stem with a knife.

  2. Place florets in a 10-inch cast iron skillet or bare baking sheet. Toss with a good amount of extra virgin olive oil, sprinkle with salt and pepper, and drizzle with about 2 teaspoons of maple syrup. Toss with two spoons to ensure everything is coated well.

  3. Roast at 425 degrees F for 20 minutes. Using a fork or tongs, rotate each floret 180 degrees so the other side can sear, then roast for another 10-15 minutes until golden brown and crispy.

  4. Serve with Vegan Tzatziki Sauce for dipping, if desired.
