Pesto Toast with Roasted Root Vegetables

Ingredients

  • Vegan seeded bread or similar healthy bread
  • 3 tablespoons olive oil
  • 1/2 lemon
  • Handful of cilantro or spinach
  • 1 teaspoon tahini
  • Sea salt
  • Hemp seeds
  • Carrots
  • Sweet potatoes

Preparation

  1. Choose a healthy bread such as vegan seeded bread, farmers market bread, or gluten-free sourdough with less than 5 ingredients.

  2. Make the pesto by combining 3 tablespoons olive oil, juice from 1/2 lemon, a handful of cilantro or spinach, 1 teaspoon tahini, and sea salt; blend or mix well to create extra pesto.

  3. Toast the bread.

  4. Spread the pesto on the toasted bread.

  5. Top with hemp seeds and additional cilantro.

  6. Roast carrots and sweet potatoes for a side dish.

  7. Serve the pesto toast with the roasted vegetables for a satisfying meal.
