Loaded Sweet Potato Fries with Garlic Tahini Sauce and Avocado

Ingredients

  • Sweet potatoes
  • Olive oil
  • Sea salt
  • Black pepper
  • Paprika
  • Avocado

Garlic tahini sauce

  • 1/3 cup tahini, well-stirred
  • 1 clove garlic, minced or 1/2 tsp garlic powder
  • 3 tbsp lemon juice
  • 4-5 tbsp water
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne powder (optional)
  • Salt and black pepper to taste

Preparation

  1. Preheat oven to 450°F.

  2. Cut sweet potatoes into matchsticks and toss with olive oil, sea salt, black pepper, and paprika.

  3. Bake on a baking sheet lined with parchment paper for 25-30 minutes until crispy.

  4. Whisk together tahini, minced garlic, lemon juice, and water until combined, adding water a tablespoon at a time until sauce reaches desired consistency.

  5. Add ground cumin, cayenne powder if using, and salt and black pepper to the sauce to taste.

  6. Slice the avocado.

  7. Top the baked sweet potato fries with the garlic tahini sauce and avocado slices.
