Loaded Sweet Potatoes with Sauce and Chickpeas

Ingredients

Sweet potatoes

  • 400-500g sweet potatoes

Sauce

  • 1 tbsp water
  • 1 tbsp lemon juice
  • 1 tbsp agave syrup
  • 2 tbsp tahini

Chickpeas

  • 420g chickpeas
  • 2 tsp cumin
  • 1/2 tsp salt
  • water

Kale

  • kale
  • lemon juice

Preparation

  1. Bake the sweet potatoes in the oven at 200C/392F for 30 minutes or until soft.

  2. Mix the sauce ingredients together: 1 tbsp water, 1 tbsp lemon juice, 1 tbsp agave syrup, and 2 tbsp tahini.

  3. Cook the chickpeas with water on high heat until they pop, seasoned with 2 tsp cumin and 1/2 tsp salt.

  4. Cook the kale with lemon juice on medium heat until slightly soft.

  5. Load the baked sweet potatoes with the prepared sauce, cooked chickpeas, and kale.
