Roasted Mixed Vegetables with Simple Hummus

Ingredients

  • favorite vegetables (e.g., potatoes, sweet potatoes, turnip, carrots, onion, brussel sprouts)
  • minced garlic
  • thyme
  • salt
  • black pepper
  • water

Hummus

  • chickpeas
  • tahini
  • lemon juice
  • garlic
  • oil
  • salt
  • water

Preparation

  1. Chop up your favorite vegetables.

  2. Spread them out on a baking tray with parchment paper.

  3. Add minced garlic, thyme, salt, and black pepper.

  4. Drizzle over a generous amount of water and mix.

  5. Roast in the oven at 220C for 30-35 minutes.

  6. In the meantime, make hummus using chickpeas, tahini, lemon juice, garlic, oil, salt, and some water.

  7. Combine the roasted vegetables with the hummus.

  8. Optionally, fry tofu or tempeh, or make falafel or chickpea patties.

  9. For extra crunch, add lightly roasted nuts and balsamic roasted cocktail tomatoes.

  10. Vary the vegetables as desired, such as adding bell pepper, green beans, or butternut pumpkin.

  11. The meal can be enjoyed both warm and cold.
