Baked Buddha Sweet Potatoes
Ingredients
- 2 sweet potatoes
- 1 small onion
- 1 can chickpeas, drained
- 3 tsp. paprika
- 1/2 tsp. cayenne
- pinch of salt and pepper
- fresh kale or salad mix
- 1/2 cup soaked cashews
- 2 tbsp. lemon juice
- 1 garlic clove
- 2 tbsp. nutrition yeast
- 1/2 tsp. salt
- pinch of black pepper
- water as needed
Preparation
Cut the sweet potatoes lengthwise and place them on a baking sheet facing the flesh down and bake for 30 minutes (depends on a size) on 200C/392F
Add chopped onion on a pan with drizzle of oil or water
Add chickpeas with all the seasoning and saute until the chickpeas become slightly brown
Take the potatoes out of the oven and scoop the insides with a fork, just to tender the insides
Top with salad, chickpeas and drizzle with a dressing
