Garlic Scape Feta Pesto

Ingredients

  • 2 cups garlic scapes (roughly chopped)
  • 1/2 lemon juiced
  • 1 cup fresh basil and mint (mixed)
  • 2 cups baby spinach
  • 1/2 cup walnuts
  • 1/2 cup vegan feta
  • 1/2 cup olive oil
  • 1/2 tsp sea salt
  • Cracked pepper
  • Pinch chilli flakes

Preparation

  1. Place all ingredients except for olive oil into bowl of a food processor and pulse several times to get started.

  2. Press start and slowly start to drizzle olive oil in, stopping to scrape down sides as needed.

  3. Process until you have a smooth consistency.

  4. Check for seasoning.

  5. Transfer to a jar. Will keep for up to two weeks and can be frozen for later use.
