Chickpea Warm Celery Salad

Ingredients

  • 1 bunch chopped celery
  • avocado oil
  • shredded carrots
  • 1/2 can rinsed chickpeas
  • 2 tbsp hemp seeds
  • whole head chopped romaine lettuce

Dressing

  • 2 tbsp tahini
  • 1 tbsp olive oil
  • 1/2 tbsp apple cider vinegar
  • pinch of sea salt
  • squeeze of lemon

Preparation

  1. Sauté 1 bunch of chopped celery in avocado oil.

  2. Add shredded carrots, 1/2 can rinsed chickpeas, and 2 tbsp hemp seeds.

  3. Cook over medium heat, stirring often, for about 5-6 minutes.

  4. Toss the warm vegetables with a whole head of chopped romaine lettuce.

  5. Dress the salad with the tahini lemon creamy dressing made from 2 tbsp tahini, 1 tbsp olive oil, 1/2 tbsp apple cider vinegar, a pinch of sea salt, and a squeeze of lemon.
