Chickpea Warm Celery Salad
Ingredients
- 1 bunch chopped celery
- avocado oil
- shredded carrots
- 1/2 can rinsed chickpeas
- 2 tbsp hemp seeds
- whole head chopped romaine lettuce
Dressing
- 2 tbsp tahini
- 1 tbsp olive oil
- 1/2 tbsp apple cider vinegar
- pinch of sea salt
- squeeze of lemon
Preparation
Sauté 1 bunch of chopped celery in avocado oil.
Add shredded carrots, 1/2 can rinsed chickpeas, and 2 tbsp hemp seeds.
Cook over medium heat, stirring often, for about 5-6 minutes.
Toss the warm vegetables with a whole head of chopped romaine lettuce.
Dress the salad with the tahini lemon creamy dressing made from 2 tbsp tahini, 1 tbsp olive oil, 1/2 tbsp apple cider vinegar, a pinch of sea salt, and a squeeze of lemon.
