Vegan Caesar Salad with Tahini and Chickpeas

Ingredients

  • 1/3 cup tahini
  • 1 lemon
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • salt
  • pepper
  • 1/4 cup warm water
  • 1 teaspoon coconut oil
  • 1 can chickpeas
  • paprika
  • garlic powder
  • onion powder
  • romaine lettuce
  • lemon wedge

Preparation

  1. Mix the dressing by combining 1/3 cup tahini, juice of 1 lemon, 1 tablespoon apple cider vinegar, 1 tablespoon olive oil, 3 minced garlic cloves, salt, pepper, and 1/4 cup warm water.

  2. For the chickpeas, heat 1 teaspoon coconut oil in a non-stick pan, add 1 can of rinsed chickpeas, paprika, salt, garlic powder, and onion powder, then cook until crispy and evenly coated.

  3. Assemble the salad by mixing everything with a bed of romaine lettuce and serve with a lemon wedge.

  4. Use a small dressing container with a spout for easy pouring and to store leftovers in the fridge.
