Chickpea Salad Sandwich with Avocado and Onions

Ingredients

  • 2-15 oz. can chickpeas
  • 1 rib celery
  • 2 tbsp fresh dill
  • 1/3 cup vegan mayo or plain non-dairy yogurt
  • 1 tbsp whole grain mustard
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp kosher salt
  • Pepper to taste
  • Juice from 1 medium lemon

Preparation

  1. Mash chickpeas in a medium bowl.

  2. Mix in the rest of the ingredients.

Serving suggestion

  1. Use in a sandwich with homemade English muffins, pickled red onions, and avocado.
