Chickpea Salad Sandwich with Avocado and Onions
Ingredients
- 2-15 oz. can chickpeas
- 1 rib celery
- 2 tbsp fresh dill
- 1/3 cup vegan mayo or plain non-dairy yogurt
- 1 tbsp whole grain mustard
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp kosher salt
- Pepper to taste
- Juice from 1 medium lemon
Preparation
Mash chickpeas in a medium bowl.
Mix in the rest of the ingredients.
Serving suggestion
Use in a sandwich with homemade English muffins, pickled red onions, and avocado.
