Vegan Mock Tuna Chickpea Sandwich

Ingredients

  • 2 1/2 cups cooked chickpeas
  • 1 green onion
  • 1 celery stalk
  • 1 medium sized garlic dill pickle
  • 1 tbsp Dijon mustard
  • 2 tbsp vegan mayo
  • 1 tsp celery salt
  • 1 tbsp dried dill
  • 2 tsp sriracha
  • Pinch salt
  • cracked black pepper

Preparation

  1. Place all ingredients in a food processor and pulse until combined.

  2. Adjust texture by pulsing to keep chunky or puree until smooth, depending on preference.
