Vegan Chickpea Tuna Sandwich with Seaweed

Ingredients

  • 1 can of chickpeas, drained
  • 1 heaped tbsp vegan mayo
  • 3-4 sheets of nori (dried seaweed)
  • 4/5 slices of cucumber
  • 1/4 of a red onion
  • 2-3 sprigs of spring onion
  • 1/2 a lemon
  • Salt & pepper
  • Some good bread

Preparation

  1. Finely chop everything except the cucumber and chickpeas.

  2. Mix everything except the cucumber together and check for seasoning.

  3. Have two slices of bread ready.

  4. On one slice, layer the cucumber and then top with the chickpea mixture.

  5. Place the other slice on top to make the sandwich.
