Vegan Chickpea Tuna Wraps

Ingredients

  • 1 can chickpeas
  • 2 ripe tomatoes
  • 1 small cucumber
  • 2 tbsp chives
  • 3 tbsp soy yoghurt
  • 1/4 tsp salt
  • 1 tsp dijon mustard
  • 1 tsp paprika
  • 1 tbsp nutritional yeast
  • pepper

Wrap dough

  • 1 cup all purpose flour
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 cup water

Preparation

  1. Rinse and drain the chickpeas.

  2. Flake them with a fork or clean hands.

  3. Add the vegetables and mix.

  4. Add the spices and yogurt and mix again.

  5. Set in the fridge for about 15 minutes so flavors meld.

Wrap making

  1. Mix and knead with one hand until a super elastic dough forms.

  2. Adjust flour and water as needed.

  3. Set aside for 10 minutes.

  4. Divide into 2 parts and roll out into very thin wraps, using flour to prevent sticking.

  5. Cook each wrap for 2 minutes on each side on a hot pan.

  6. Keep in a clean dish towel.

  7. Use right away or dampen the towel with water and microwave for 20 seconds to make soft again.

Assembly

  1. Fill the wraps with the vegan tuna mixture and serve with additional vegetables like cabbage, lettuce, avocado, and sprouts
