Quick Chickpea Wraps with Fresh Toppings

Ingredients

  • 6-8 flatbreads
  • 2 cups cooked chickpeas
  • 1 small onion
  • 2 garlic cloves
  • 1 small tomato
  • 1 tsp cumin
  • 1 tsp turmeric
  • salt & pepper

Toppings

  • cucumber
  • avocado
  • red onion
  • hummus
  • Harissa sauce (optional)
  • jalapeño pepper (optional)

Preparation

  1. Dice onion, tomato and mince your garlic. Turn pan on medium high. Add splash of water or vegetable broth to pan along with your onion, tomato and garlic. Sauté until onion becomes translucent.

  2. Add chickpeas to pan along with another splash of water or vegetable broth. Keep adding splashes once it gets dry again. Add turmeric, cumin, salt and pepper. Cook for another 7-10 minutes on low heat.

  3. While chickpeas are sautéing, dice the vegetables for your toppings. Once chickpeas are done, assemble your wraps.

  4. Heat up flatbread on griddle. Spread your hummus (try homemade, check my previous post for more info) onto the flatbread. Add harissa if you like spice. Add a large spoonful of chickpeas and all other toppings and enjoy!
